Summary
Das Forschungsvorhaben VORWERTS untersucht und bewertet die Adoption agrarökologischer Innovation und transformatives Handeln am Beispiel von Weizen-Körnerleguminosen-Mischkultur im Reallabor. Acht regionale Bio-Wertschöpfungsketten, bestehend aus mindestens einem landwirtschaftlichen Betrieb, einer Mühle und Bäckerei, werden partizipativ in den Forschungsprozess eingebunden.
Untersucht wird der Anbau, die Aufbereitung und Trennung, die Verarbeitung sowie die Vermarktung von Weizen-Körnerleguminosen-Gemengen unter Praxisbedingungen. Innerhalb der Praxis werden die agronomische Leistung und Backqualität der Gemenge im Vergleich zu Reinkulturen bewertet. Neben agronomischen Daten und Backqualitäten werden die technischen Parameter der Trennung und Reinigung von Gemengepartnern beurteilt und so Optimierungspotenziale erarbeitet. Auch mögliche phytosanitäre Aspekte in Gemengedruschfrüchten werden untersucht (Mykotoxinanalysen). Eine ökonomische Analyse der Mischkulturen dient der Praxis als Entscheidungsunterstützung.
Erfolgsfaktoren für die Zusammenarbeit und das Innovationspotenzial in kleinstrukturierten regionalen Bio-Wertschöpfungsketten werden durch qualitative Methoden untersucht. Der Backweizen aus der Mischkultur wird in zwei Backkampagnen verarbeitet und vermarktet, um Anpassungsbedarfe und Optimierungspotenziale der Verarbeitungsprozesse zu identifizieren. Mit Verkaufstests und Befragungen wird die Akzeptanz in der Vermarktung quantitativ analysiert.
Alle Praxispartner*innen entlang der Wertschöpfungsketten bis zu den Konsument*innen werden im Rahmen des Reallabors partizipativ an der Bewertung und der Optimierung von Korntrennung, Reinigung, Backqualität, Vermahlung, Verarbeitung und Vermarktung mitarbeiten. VORWERTS liefert eine Blaupause für die Durchführung von transdisziplinärer Praxisforschung im Reallabor und erarbeitet konkrete Handlungsempfehlungen zur Anwendung und Verbreitung von Weizen-Körnerleguminosen-Mischkulturen in regionalen Bio-Wertschöpfungsketten.
Summary translation
The research project VORWERTS investigates and evaluates the adoption of agroecological innovation and transformative action in the case of wheat/grain legume intercropping in a real-life laboratory (“living lab”). Eight regional organic value chains, consisting of at least one farm, one mill and bakery, will be involved in the participative research process.
The cultivation, harvest and separation, processing, and marketing of wheat-grain legume mixtures under practical conditions will be investigated. On-farm and in practice, the agronomic performance and baking quality of the mixtures will be evaluated in comparison to the pure stand crops. In addition to agronomic data and baking qualities, the technical parameters of separation, sorting, and cleaning of the partner crops will be investigated to identify the potential for process optimization. Possible phytosanitary aspects in the harvested mixed crops will also be investigated (mycotoxin analyses). An economic analysis of the mixed crops provides decision support for the practice.
Success factors for cooperation and innovation potential in small-structured regional organic value chains are investigated with a qualitative approach. Baking wheat from the mixed crop will be processed and marketed in two baking campaigns to identify adaptation needs and optimization potential of the processing procedures. Sales tests and consumer surveys will be used to quantitatively analyze market acceptance.
All project partners along the regional value chains up to the consumers will participate in the evaluation and optimization of grain separation, cleaning, baking quality, milling, processing and marketing within the framework of the living lab. VORWERTS provides a blueprint for conducting transdisciplinary practical research in a real-lifelaboratory and develops specific recommendations for action for the application and dissemination of wheat-grain legume mixed crops in regional organic value chains.
