Både innen produksjon av moreller (Prunus avium) og gulrøtter (Daucus carota subsp. Sativus) er soppsykdommer som kan gi store produksjonstap en utfordring. Det er
vist at behandling med ozon kan forlenge holdbarheten av ulike matvarer. I denne studien har vi undersøkt hvordan og hvor lenge moreller og gulrøtter bør behandles med ozonholdig vann. Vi har også gjennomført en lagringsstudie der vi har undersøkt hvordan behandling i ozonholdig vann påvirker kvalitetsegenskaper som smak, lukt og farge på emballerte moreller og gulrot. Studien viste at det er
potensiale for å forlenge holdbarhet for både moreller og gulrøtter ved å benytte ozonert vann, men at teknologi og prosess må tilpasses produktet.
Summary translation
Both morels (Prunus avium) and carrots (Daucus carota subsp. sativus) face significant challenges from fungal diseases that can lead to major production losses. Studies have shown that ozone treatment can extend the shelf life of various foods. In this study, we investigated the optimal duration and method for treating morels and carrots with ozonated water. Additionally, we conducted a storage study to assess how ozonated water treatment affects quality characteristics such as taste, smell, and color in packaged morels and carrots. The findings indicate that ozonated water has the potential to extend the shelf life of both products; however, the technology and process must be tailored to each specific product.
