Summary

Swiss sugar production from beets faces increasing challenges. Switzerland currently relies on imported sugars to meet domestic needs in the Food & Beverages industry, making the transition to more resilient and locally sourced alternatives crucial. In parallel, the rising consumer demand for healthier, natural alternatives to refined sugars calls for innovative sweetening options.
The project explores sweet sorghum as a novel, sustainable crop for Switzerland to develop a natural, healthier sweetener with a lower environmental footprint to current sugar sources.
