The dataset generated by the HO-FOOD project can be summarised as follow:
o Qualitative reports: documents generated for the selection of the possible target products based on market potential, seasonality, geographic distribution and attitude to resist to
high pressures;
o Design and operation reports: documents that describes the design and the operational for
the small and medium apparatuses planned to be built during the project;
o Microbial inactivation, quality, sensorial and bio-accessibility dataset: it will contain quantitative data about weight, volume, gas percentage, operative conditions and microbial load and/or quality and sensorial data and/or bio-accessibility of the products before and after the treatment, and during the shelf-life; they will also contain data about non-treated products or products stored or treated in different ways. The explanation of the dataset will
be always coupled to easily understand the results;
o Economic sustainability and life cycle assessment reports.
