In this work package of the project, it is aimed to determine the effect of moderate pressure application on the bioaccessibility of important product-specific components. In accordance with these objectives, total phenol, antioxidant activity and total carotene (except almonds) were selected as important components for squash, melon and almond materials. Analysis was done samples with and without moderate pressure treatment. For almonds, total carotene was not analyzed because it is not a significant component. In the bioaccessibility study, the amounts of these components were analyzed in phases. Statistical analysis was applied to the analysis results. Statistically important differences and significant effects of the application were reported.
