This report presents the findings from challenge tests performed on three different food matrices—almonds, squash, and melon—using various preservation methods. These methods included Modified Atmosphere Packaging (MAP) with different CO2 concentrations, temperature control, and a novel High Pressure MAP CO2 (HPMAPCO2) prototype. Due to safety concerns and logistical challenges, challenge tests with pathogenic microorganisms were not conducted. Instead, the microbiological characterization of the samples was performed, which included pathogen detection and antibiotic resistance assays.
