Summary

Die vorliegende Untersuchung der Hemmnisse und Erfolgsfaktoren bei der Umstellung auf die Öko-Verarbeitung unterscheidet in Probleme auf der Sach- und Motivationsebene. Die Kernprobleme auf der Sachebene sind:
• Geringe Losgrößen führen zu hohen Stückkosten und sind Hauptursache der Preisbarriere.
• Die Kernzielgruppen des Öko-Marktes sind zu klein. Stärkeres Umsatzwachstum erfordert die Erschließung neuer Zielgruppen jenseits der Öko-Intensivverbraucher.
• Abstimmungsdefizite in der Vermarktungskette, besonders an der Schnittstelle Hersteller mit Handel, verhindern die Umsetzung eines aktiven Öko-Marketing.
Die Kernprobleme auf der Motivationsebene sind:
• Es fehlt die Überzeugung, dass es ein größeres Nachfragepotenzial für Öko-Produkte gibt, als derzeit realisiert wird.
• Unbewusster oder ungenannter Widerstand in konventionell dominierten Strukturen gegen die Lebensstilkritik, die mit dem Öko-Markt einhergeht.
Reine Öko-Verarbeiter: Die Naturkosthersteller haben Probleme, neue Zielgruppen zu erreichen, weil ihre Produkte mit dem Vollwertkostimage verbunden sind und sie keine Markenwirkung haben. Zur Problemlösung müssten sie horizontal und vertikal zwecks Effizienzsteigerung kooperieren.
Handwerk: Das Kernproblem ist auch hier die Zielgruppenbeschränkung.
Konventionelle Hersteller: Viele Hersteller sehen das Öko-Absatzpotenzial als zu klein an oder sie befürchten eine Image-Diskriminierung ihrer konventionellen Produkte und dadurch Umsatzrückgänge (Kannibalisierung des Gesamtumsatzes). Empirische Belege für diese Befürchtung fehlen. Es gibt im Gegenteil erste Belege für positive Spill-overs von Öko auf das konventionelle Markenimage.
Perspektive / Erfolgsfaktoren:
Eine erfolgreiche Strategie der Markterweiterung ist der Weg vom konventionellen Qualitätsführer zum Qualitätsführer mit Öko-Nutzen on top. Dies gilt für das Handwerk und die Ernährungsindustrie. Klassische Markenartikel in Öko-Qualität haben durch ihre Brückenwirkung das Potenzial, neue Kundenkreise zu erreichen.
Die Behebung der vertikalen Schnittstellenprobleme mit dem Handel erfordert die horizontale Zusammenarbeit von Herstellern und ein aktives Schnittstellenmanagement.
Im Rahmen der Forschung wurde ein Netzwerk von öko-aktiven Markenherstellern initiiert.

This investigation focuses on constraints and success factors in the transition toward processing organic products. Problems are analyzed on the factual and motivational level.
Core problems on the factual level:
• Small lots lead to high unit costs and to a vicious circle of very high prices on consumer level.
• The target groups of the organic market are too small. Increase of turnover requires the exploration of new target groups beyond the typical organics consumer
• Deficits in the marketing chain, particularly at the interface between producer and retailer, hamper a proactive eco-marketing
Core problems on the motivational level:
• There is no conviction that the potential for demands of organic products is higher than currently observed
• Unconscious or implicit resistance against the lifestyle criticism that is often attributed to the organic scene
Plain organic manufacturers
Organic manufacturers have problems in gaining new target groups due to their unattractive wholesome foods image and the missing momentum of strong brands. They have to cooperate horizontally and vertically in order to increase efficiency.
Conventional manufacturers
The core problem is the limitation to the core customer group.
Conventional food industry
In the conventional food industry the sales potential for organic food is generally regarded as too small, or they fear discrimination of their conventional range due to a parallel organic range and therefore a loss in total turnover. However, this fear is not supported by any empirical experience. In contrast, positive image spill-over effects from the organic range towards the conventional range could be observed.
Prospect
A promising strategy for manufacturers and the food industry to increase the total market share leads from quality leadership to quality leadership with an organic surplus value. Well-established brand products in organic quality can bridge the gap between the conventional and the organic market and are therefore promising to reach new customers.
Both a horizontal cooperation between producers and a proactive interface management are required to overcome the problems at the vertical interface between supplier and retailer.
In the context of research an exemplary network of brand manufacturers with an organic range was initiated.
