Summary
The project’s overall objective is to define the sustainability of organic agriculture based on three
two-part dimensions that must be confronted with each other and balanced, namely,
- economic sustainability: competitive position and potential for development,
- environmental sustainability: reproduction of resources and balance of specific externalities; and
- social sustainability: innovative abilities and social/territorial externalities.
These dimensions must be evaluated, matched up with effective sets of references, and backed up by policy instruments.
This makes it possible to define the research’s specific aims:
1. To establish technical references for the two major stakes linked to the organic ranching and
fattening of cattle, namely, rations and health. That entails making use of/improving the positive
externalities of organic cattle ranching schemes (nitrogen balance, biodiversity) and analysing their environmental and social costs.
2. To study and test the organisational forms that permit negotiation between marketing requirements and the dimensions of sustainability and to reinforce the guarantees that the various production and processing networks appear to give consumers.
3. To analyse consumer demand and the most suitable communication tools and to initiate a participatory and experimental approach to negotiation.

L'objectif général du projet est de définir la durabilité de l'agriculture biologique sur la base de trois
dimensions distinctes qui doivent être confrontées et équilibrées entre elles, à savoir :
- la durabilité économique : position concurrentielle et potentiel de développement ;
- la durabilité environnementale : reproduction des ressources et équilibre des externalités spécifiques ; et
- la durabilité sociale : capacités d'innovation et externalités sociales/territoriales.
Ces dimensions doivent être évaluées, mises en correspondance avec des référentiels efficaces et soutenues par des instruments politiques.
Cela permet de définir les objectifs spécifiques de la recherche :
1. Établir des références techniques pour les deux enjeux majeurs liés à l'élevage et à l'engraissement biologiques
des bovins, à savoir les rations et la santé. Cela implique d'utiliser/d'améliorer les externalités positives
des systèmes d'élevage bovin biologique (bilan azoté, biodiversité) et d'analyser leurs coûts environnementaux et sociaux.
2. Étudier et tester les formes d'organisation qui permettent la négociation entre les exigences de commercialisation et les dimensions de la durabilité et renforcer les garanties que les différents réseaux de production et de transformation semblent donner aux consommateurs.
3. Analyser la demande des consommateurs et les outils de communication les plus adaptés et lancer une approche participative et expérimentale de la négociation.
