Summary

Økologisk melk produsert på rødkløvergrasbeite (RB) eller botanisk allsidig beite (AB) ble analysert for fettsyresammensetning, vitamininnhold og oksidativ stabilitet. Hypotesen i forsøket var at melk produsert på RB har et høyere innhold av flerumettede fettsyrer og at melkefettet dermed er mer utsatt for oksidasjon enn melk produsert på AB. Det var også forventet å finne et høyere innhold av vitaminer i melk produsert på RB enn på AB som kan hemme oksidasjonsprosessen. I et kontinuerlig produksjonsforsøk gikk to grupper à åtte kyr (Norsk Rødt Fe) i tre perioder à tre uker på henholdsvis RB (28 % rødkløver, 19 % timotei, 33 % engsvingel, 17 % andre urter)
eller AB (21 % hvitkløver, 19 % engrapp, 17 % timotei, 15 % engsvingel, 3 % rødkløver, 9 % andre urter). Forsøket gikk fra juni til september i 2008 på Ås. Begge gruppene fikk tildelt 2,67 kg ts byggkraftfôr per dag tilsatt anbefalte mengder av mineraler inkludert organisk selen. Melk fra kyrne ble samlet den siste uka i hver periode og fryst ned til -20 °C til analyse. Beitetype påvirket ikke beiteopptaket og melkeytelsen i særlig grad. RB hadde et høyere innhold av flerumettede fettsyrer enn AB, men dette hadde ingen effekt på fettsyresammensetningen i melka. Innholdet av α-tokoferol (vitamin E) var høyere i RB enn AB. Dette gav også et signifikant høyere innhold av α- okoferol i melka fra RB enn fra AB. To metoder ble brukt for å måle graden av oksidasjon i melka; peroksidtest og
fluorescensspektroskopi. For å sette i gang oksidering ble melka belyst i henholdsvis 0 (referanse), 24 og 48 timer. Det ble ved peroksidtesten ikke funnet noen forskjeller mellom beitetypene i mengde oksidasjonsprodukter i den belyste melka. Fluorescensspektroskopi viste forskjeller mellom gruppene i området 400-500 nm. Det er noe usikkert hva dette er da det kan være fluorescens fra både bakterier og/eller oksidasjonsprodukter. Dette forsøket viser at melk fra beite med moderate mengder rødkløver kan ha like god oksidativ stabilitet som melk produsert på botanisk allsidig beite. Dette kan forklares ut fra at forskjeller i botanisk sammensetning på RB og AB bare førte til små endringer i melkas fettsyresammensetning. Det kan tenkes at en ville fått større forskjeller i fettsyresammensetningen dersom rødkløverandelen i RB hadde vært høyere.


Summary translation

Organic milk produced from red clover grass grazing (RB) or botanical diverse grazing (AB) was analyzed for fatty acid composition, vitamin content and oxidative stability. The
hypothesis of the experiment was that the milk produced on RB has a higher content of polyunsaturated fatty acids and that the milk fat thus is more prone to oxidation than milk
produced from AB. It was also expected to find a higher content of vitamins in the milk produced in RB than in AB which can inhibit the oxidation process. In a continuous production experiment two groups of eight cows (Norwegian Red Cattle) in three periods of three weeks each on RB (28% red clover, 19% Timothy, 33% meadow fescue, 17% other herbs) or AB (21% white clover, 19 % Kentucky bluegrass, 17% Timothy, 15% meadow fescue, 3% red clover, 9% other herbs). The experiment ran from June to September in 2008 in Ås, Norway. Both groups were given 2.67 kg dry matter concentrate of barley per day added the recommended amounts of minerals including organic selenium. Milk from the cows was collected the last week of each period and frozen down to -20 ° C until analysis. DM intake and milk yield was not affected by pasture. RB had a higher content of ultiunsaturated fatty acids than AB but this had no effect on the fatty acid composition of the milk. The content of α-tokoferol (vitamin E) was higher in RB than AB. The content of α- tokoferol in milk was significantly higher in RB than in AB. Two methods were used to measure the degree of oxidation in milk; peroxide test and fluorescence spectroscopy. To initiate oxidation, the milk was exposed to light in 0 (baseline), 24 and 48 hours. The peroxide method did not show any differences between the two types of pasture with regards to the amount of oxidation products in milk. Fluorescence spectroscopy showed differences between groups in the range 400-500 nm. It is somewhat
unclear what this is, as it can be fluorescence from both bacteria and / or oxidation products. This experiment shows that milk from grazing with moderate amounts of red clover can have just as good oxidative stability, as the milk produced on botanical diverse pasture. This can be explained by the differences in botanical composition of the RB and AB which only led to small changes in the milk fatty acid composition. It is conceivable that it might had been greater differences in fatty acid composition if the red clover concentration in RB had been higher.
