Summary
ÖMKi has been cultivating and assessing traditional emmer and einkorn wheat under organic conditions since 2015. Within the LiveSeeding project, it developed the “Discover the Taste of Ancient Wheats!” recipe collection to help consumers use these nutritious but little-known grains in everyday cooking. The recipes demonstrate their versatility in breads, pasta, biscuits, soups, salads, traditional Hungarian dishes, plant-based products, drinks and desserts. By providing alternatives for different dietary preferences, the collection aims to increase consumer awareness, encourage wider use of ancient grains and support their market development and the preservation of genetic diversity.
