Summary
Cette enquête annuelle, réalisée depuis 2012, porte sur les pratiques œnologiques des vignerons français en agriculture biologique. Elle est menée par l’ITAB et Vignerons Bio Nouvelle Aquitaine. Sa reconduite permet de suivre l’évolution des pratiques des vignerons bio. Celles-ci évoluent en fonction des millésimes, de l’arrivée de nouveaux vignerons bio dans la filière, des évolutions réglementaires... D’un point de vue conduite de la vigne, le millésime 2021 a été très compliqué à gérer sur le terrain, avec un gel important en début de saison et une très forte pression en mildiou au mois de juin. Au niveau des pratiques œnologiques, les résultats montrent qu’elles ont peu évolué par rapport aux millésimes précédents. Les utilisations d’intrants et techniques autorisés en bio restent faibles (inférieures à 30 %, si l’on exclut le SO2 et les barriques), même si la quasi-totalité des outils mis à disposition par la réglementation sur le vin bio est employée. Cette enquête confirme également l’existence de deux écoles de vinification pour les vins biologiques : d’une part, les vignerons qui tentent de se passer au maximum des intrants ; d’autre part, les vignerons qui utilisent une palette d’intrants plus large, afin d’obtenir un vin au profil spécifique et/ou constant dans le temps (notamment pour répondre au marché de l’export). Concernant les déviations et problématiques rencontrées durant la vinification, les vignerons bio prennent de plus en plus le réflexe d’analyser la présence de Brettanomyces. Les problématiques de déviation semblent avoir été plus faibles pour ce millésime 2021. Les problèmes de goût de souris resteraient néanmoins spécifiques aux vins sans SO2.
Summary translation
This annual survey, conducted since 2012, focuses on the winemaking practices of French organic winegrowers. It is carried out by ITAB and Vignerons Bio Nouvelle Aquitaine. Its continuation allows for monitoring the evolution of organic winegrowers' practices. These practices change according to the vintage, the arrival of new organic winegrowers in the sector, regulatory developments, and other factors. From a vineyard management perspective, the 2021 vintage was very challenging to manage in the field, with a significant frost at the beginning of the season and very high mildew pressure in June. Regarding winemaking practices, the results show that they have changed little compared to previous vintages. The use of inputs and techniques authorized in organic winemaking remains low (less than 30%, excluding SO2 and barrels), even though almost all the tools made available by organic wine regulations are used. This survey also confirms the existence of two schools of thought regarding organic winemaking: on the one hand, winemakers who strive to minimize the use of additives; on the other hand, winemakers who employ a wider range of additives to obtain a wine with a specific and/or consistent profile over time (particularly to meet the demands of the export market). Regarding deviations and problems encountered during winemaking, organic winemakers are increasingly testing for the presence of Brettanomyces. Issues with deviations appear to have been less frequent in the 2021 vintage. However, problems with mousy flavors seem to remain specific to wines made without added SO2.
