Les froments cultivés au cours des 150 ans dernières années ont été sélectionnés d’abord, sur le plan
agronomique, pour gagner en productivité afin de nourrir la population puis, au niveau technologique, pour
répondre aux attentes des transformateurs et transformatrices résultant des bouleversements technologiques en meunerie et en boulangerie. Un essai spécifique a été mené en conditions d’agriculture biologique au CRA-W, sur des variétés froment de cette période, pour en suivre l’évolution des propriétés technologiques,
afin d’identifier à quels types meunerie et boulangerie spécifiques elles sont adaptées.

Wheat varieties cultivated over the last 150 years have been selected first, from an agronomic perspective,
to increase productivity in order to feed the population, and then, from a technological perspective, to
meet the expectations of processors resulting from technological changes in milling and baking. A specific trial was conducted under organic farming conditions at CRA-W on wheat varieties from this period to monitor changes in their technological properties
in order to identify the specific types of milling and baking for which they are suitable.
