Cette revue bibliographique donne un aperçu des connaissances sur le microbiote digestif des animaux de boucherie et sur l’effet d’une éviscération retardée sur les propriétés sanitaires des carcasses. Après la mort des animaux, l’activité bactérienne persiste avec pour conséquence une production de gaz qui dilate le tube digestif et augmente le risque de contamination de la carcasse à l’éviscération. De plus, certaines bactéries peuvent migrer naturellement de la lumière du tube digestif à la lymphe par un mécanisme de translocation. Pourtant, les quelques études scientifiques portant sur le gibier et les animaux de boucherie indiquent qu’après un délai allant de 30 minutes à 5 heures, les carcasses ne présentent pas de risque sanitaire pour la consommation humaine. Cependant, des études supplémentaires utilisant des approches omiques sont nécessaires pour déterminer plus clairement cet éventuel risque sanitaire notamment dans le cadre de l’abattage à la ferme qui induit une augmentation du délai entre la saignée et l’éviscération.
Summary translation
This bibliographic review provides an overview of knowledge on farm animal digestive microbiota and on the effect of a delay between death and evisceration on meat microbiological quality. After the animal’s death, bacterial activity persists, resulting in the production of gas which dilates the digestive tract and increases the risk of carcass contamination during evisceration. In addition, some bacteria can migrate from the lumen of the digestive tract to the lymph by a natural mechanism of translocation. However, the majority of the few scientific studies on this topic show that after a delay ranging from 30 minutes to 5 hours, carcasses do not present a health risk as defined by European regulations. Further studies with omics approaches are needed to determine more clearly this possible health risk, especially in the context of on-farm slaughtering, which leads to an increase in the time between bleeding and evisceration.
