For at kunne nå klimamålene i Parisaftalen og FN’s verdensmål, er det nødvendigt at optimere kostsammensætningen i såvel private hjem som i storkøkkener.Kostsammensætningen rummer et af de største potentialer for reduktion af klimapåvirkningen fra vores fødevaresystemer. Data fra foodservice-sektoren er blevet brugt til at identificere de mest almindelige økologiske fødevarer og fødevaregrupper. Forskerne har desuden gennemført en stor videnskabelig gennemgang af LCA-studier.
Summary translation
In order to achieve the climate goals in the Paris Agreement and the UN's sustainable development goals, it is necessary to optimize the diets in private homes as well as in commercial kitchens. The composition of the diet holds one of the greatest potentials for reducing the climate impact from our food systems.
Data from the foodservice sector has been used to identify the most common food items and food groups. The researchers have also carried out a large scientific review of LCA studies.
