We identified the influence of six crop rotation and two varieties in a long-term experiment on grain yield and baking quality of winter wheat. The three- and five-year crop rotations differed in the utilization of grass clover swards (cutting or mulching), in the position of wheat in the crop rotation (first or second crop after legume), in the portion of grass clover swards and in the type of legume (grass clover or grain legume). The lowest grain yield as well as the most inferior baking quality was shown after grain legume. In this treatment, only the variety with high baking quality showed a sufficient baking quality. Also, the high yielding variety showed a baking quality at the lower level of market demands in the crop rotation resulting in highest baking quality (mulched grass-clover sward). Hence, crop rotation and choice of variety must be considered when cropping baking wheat.
