Het doel van het project ´Bijzonder Biologisch, groenten met karakter´is om een sterkere marktpositie voor biologisch geteelde gewassen bospeen, bewaarpeen en rode biet te bereiken door een verbeterde onderscheidbaarheid op producteigenschappen, gerelateerd aan gezond, genieten en smaak. Zowel bij bospeen als bij bewaarpeen zijn gerichte kenmerken gevonden, om biologisch geteeld product onderscheidbaar in de markt te zetten. Door extra aandacht aan de presentatie kan dat ook op een herkenbare manier in het schap tot uitdrukking gebracht worden. Bij kroten kan de mogelijkheid van slecht smakende kroten (grondsmaak) worden verkleind, waardoor het gemiddelde smaakniveau verbetert. Dit zijn stuurbare factoren voor teler en afzetpartijen, die tegen beperkte meerkosten, ingezet kunnen worden.

Consumers expect organic products not only to be produced in a sustainable way but also to taste better. However for many organic products a good taste not always goes without saying. Therefore producers and the food chain have to take action to take care of a good taste profile. Objective of this project: A stronger market position for organically cultivated pilot crops carrot and red beets by an improved performance related to health, pleasure and taste. For realization there are five sub objectives: a) there must be good organic varieties of these crops, which are striking and suited for all chain members, b) The organic retailer prefers these varieties with specific qualities, c) the customer is informed about the special attention for specific well tasting carrot en red beet. d) the chain members are informed about the wishes, preference and appreciation of the customer e) the level of the characteristic qualities is high and stable in the shop during the season. The project is unique in the Dutch organic vegetable branch. For the first time is tested within one chain how to enhance the food factors health, pleasure and taste and how was the response of the consumer. Also unique is the cooperation concept of 4 chain members and 4 research8 and advisory partners. Results: The market of all organic vegetables strongly increases, inclusive the market of the carrots and red beets. It is difficult to say that the rise is the direct effect of this project, but the conditions to obtain this effect has been created. For bunching carrots and winter carrots there are specific varieties with a good taste available, like the bunching carrots variety Mokum and the storage carrots variety Negovia. The good taste profile is confirmed by expert and consumers panels. Growers will use these varieties. The organic retailer prefers these varieties with specific qualities, and the customer is well informed about the special attention for good tasting carrots by promotion flyers and shop actions. A chain protocol is made, tested and will be implicated in the whole chain from grower to shopkeeper to guarantee a high and stable quality of the characteristic qualities during the season. For red beets the variation in taste within one lot (from one parcel and one variety) seemed to be bigger than the variation between varieties, parcels and chain influences. Further research is needed to find out what is causing this variation. In any case, a smaller beet size gives a better taste. Therefore red beet must be grown in a higher density
