Autonomie alimentaire d'une pat; et création d'une valeur aoutée sur le produit, d'autre part, constituent deux leviers majeurs pur améliorer l'efficience économique en élevage bovin viandeux biologique. Cependant, face aux attentes du marché en matière de qualité organoleptique de la viande, viser l'autonomie en engraissement et finition des bovins n'est pas chose aisée. Par ailleurs, dans un contexte global, l'élevage bovin est largement décrié pour sa contribution aux changements climatiques par ses émissions de méthane en particulier. Dans ce cadre, le CRA-W a investigué durant trois années la production de veau rosé sous trois angles: zootechnique, économique et environnemental.

Food self-sufficiency on the one hand, and the creation of added value on the product, on the other, are two major levers for improving economic efficiency in organic beef farming. However, in view of market expectations regarding the organoleptic quality of the meat, aiming for autonomy in fattening and finishing cattle is not easy. Moreover, in a global context, cattle farming is widely criticised for its contribution to climate change, particularly through its methane emissions. In this context, the CRA-W has investigated the production of pink veal for three years from three angles: zootechnical, economic and environmental.
