Summary
The online workshop aimed to disseminate the ProYoungStock project to Italian stakeholders and students, with the contribution of different partners of the project. The outline of the ProYoungStock was illustrated, as well as the traditional cow-calf-contact systems in France and Italy. Then, the effects of the seasonality of extensive ruminant farming and the tannin feeding on the quality of milk and cheese were shown in detail. The workshop ended with a general discussion.
