Summary
La production cunicole française s’élève à 57 000 tonnes de carcasse en 2015. Elle est assurée à 80%par environ 1000 ateliers spécialisés, situés à 70% dans le grand ouest (Bretagne, Pays de la Loire,Poitou-Charentes). Elle se situe au 3 e rang mondial, après la Chine (450 000 t), l’Espagne (60 000 t) etdevant l'Italie (30000t). La rationalisation de la filière cunicole conduit à augmenter la taille moyenne desélevages (environ 600 lapines = 1 employé). La production d’aliments composés est d’environ 450 000 tpour 840000 lapines en production et 43 millions de lapins vendus par an. La consommation françaisede viande de lapin est environ d'1 kg par habitant et par an. Comme pour les autres viandes, cetteconsommation tend à se réduire, sachant que la vente de viande de lapin est assurée à 74 % dans lesGMS. La cuniculture conventionnelle (80% de la production) est peu diversifiée, car basée sur unsystème standardisé (hors-sol) "naisseur-engraisseur" avec conduite en bande et inséminationartificielle. La production "fermière" subsiste sous forme de petits élevages (<100 lapines) avec venteen circuits courts, et notamment la production cunicole sous certification AB est en train d'émerger (50éleveurs).
Summary translation
The French rabbit production amounted to 57 000 tons of carcass in 2015. It is 80% insured by about1000 specialized farms, located at 70% in the great west (Brittany, Pays de la Loire, Poitou-Charentes).French rabbit breeding ranks third in the world, after China (450,000 t), Spain (60,000 t) and ahead ofItaly (300,000 t). Rationalization of the rabbit industry led to an increase in the average size of farms(about 600 rabbits = 1 person). The production of compound feed is about 450 000 t for 840000productive does and 43 million rabbits sold per year. French consumption of rabbit meat is about 1 kgper inhabitant per year. As for other meats, this consumption tends to reduced, knowing that the sale ofrabbit meat is ensured to 74% in supermarkets. Conventional rabbit systems (80% of production) arenot very diversified and based on a standardised system (sol-free) "breeder-fattener" with batchmanagement and artificial insemination. The "farm" production remains in the form of small units (<100does) with sale in short circuits, and in particular rabbit production under organic certification isemerging (50 breeders).
