Summary

This report presents the results of the French Qualiblébio project on the analyses and comparisons of protein profiles of 24 wheat varieties.
The results showed great differences between types of varieties (organic pure lines, conventionnal pure lines and farmers' population). Pure lines presents higher proportion in inextractible fraction (the heaviest gluten protein).
