Summary
Ce rapport présente les résultats d’analyse des spectres protéiques réalisés dans le cadre du projet QUALIBLEBIO coordonné par la CAB PdL. 24 farines (variétés) ont fait l’objet d’une analyse du gluten index par glutomatic et d’une analyse du spectre protéique par Chromatographie.
Les farines ont été échantillonnées à l’occasion des tests panification qui se sont déroulés aux minoteries Suires les 11 et 12 février 2020. Les résultats mettent en évidence des différences marquées entre variétés sur la qualité des protéines et plus particulièrement le spectre en
gluténine.
Summary translation
This report presents the results of the protein spectra analysis carried out in the framework of the QUALIBLEBIO project coordinated by the CAB PdL. 24 flours (varieties) were analysed for gluten index by glutomatic and for protein spectrum by chromatography.
The flours were sampled during the breadmaking tests that took place at the Suires flour mills on 11 and 12 February 2020. The results show marked differences between varieties in terms of protein quality and more particularly the
glutenin spectrum.
