Качеството на храните е категория която се развива непрекъснато. В настоящия доклад са обобщени и анализирани концепциите за качество на биологичните храни в литературата, като е използван дескриптивно-аналитичен метод.
Разгледаните концепции се основават на субективните оценки, които играят важна роля в предпочитанията на потребителите. На практика, потребителите оценяват качеството главно чрез своите възприятия, които са филтрирани и претеглени чрез скалата на предпочитанията, водещи след това до избора на продукт. Консуматорите оценяват качеството на биологичните храни и го смятат за по-високо, спрямо това на обикновените продукти.


Summary translation

Food quality is a category that has evolved continuously. This report generalizes and analyses the concepts of quality and safety of organic food in the literature using the descriptive and analytical methods.
The concepts are based on subjective evaluations, which play an important role in consumer preferences. In practice, consumers assess the quality mainly through their perceptions, which are filtered and weighted by the scale of preferences, leading then to product selection. Consumers assess the quality of organic food and consider it higher than of ordinary products.
