Summary

Summary translation

The uptake of oxigen is essential for life processes, but also entailing oxidation. The effectiveness of a range of mechanisms protecting the organism against free radicals is reduced by aging, environmental contaminants, unhealthy life style and stress. The P-Value represents an integrative value, calculated from the three parameters redox potential, pH-value and electrical conductivity, indicating the activity of electrones: the lower the value, the higher the reductive power.
This method has originally been developed by Prof. Vincent (1935) for the application in the area of hydrology. Later it became an instrument of holistic medicine and tumour research. In the last decades it has also been used to determine electrochemical quality aspects of food. In contrast and addition to traditional chemical analysis P-Values show the vitality of foods by defining their ability to promote life. The underlying hypothesis states, that the reductive potential of food resp. its electrones counteracts oxidative stress. Especially fresh food from organic agriculture shows a considerable advantage in this respect.
The method descibes the energy flow in biological systems and is defined as electrical power, expressed in µW.
• The redox potential is an indicator of the relation between reductive and oxidative conditions in the test solution.
• The pH-value states the acidity of the sample, the number of free protons in solution. It depends on the pH value, which redox system is active.
• The electrical conductivity (mS) describes the rate of free ions in the test solution. Its reciprocal, the electrical resistance (Ohm), gives information about the resistance of a system against the electric current, that is transmitted into the cells. The higher the resistance the more compact, firmer, younger and healthier is the test product.
“The more reduced a food is, the lower is also its P-Value, the higher is its reductive potential, the readyness of its electrones to “jump”, and the more valuable is the food from an electrochemical point of view” (H.Heinrich, Ch. Rey, 1997).
