Summary

Extensively fattened dairy‑beef crosses grew more slowly but produced carcasses with similar maturity, less subcutaneous fat, and noticeably higher marbling compared to intensively fattened animals. Despite their smaller eye‑muscle area, these extensively raised carcasses align well with Swiss premium beef market preferences for smaller steaks, leaner fat cover, and good marbling. The study shows that extensive grass‑based systems can deliver high‑quality beef while relying on minimal concentrates.
