L'ITAB et Arvalis - Institut du végétal ont rassemblé les informations disponibles sur le comportement de différentes variétés de blé tendre d'hiver adaptées à une conduite en agriculture biologique. Chaque variété fait l’objet d’une fiche. Ces dernières contiennent des informations sur :
1 – l’identité de la variété (obtenteur, nombre d’années en test dans le réseau bio, classe technologique…) ;
2 – le comportement agronomique (précocité, alternativité, résistance au froid, résistance à la verse, hauteur, capacité à concurrencer les adventices, sensibilité aux maladies…) ;
3 – le potentiel de rendement et la teneur du grain en protéines ;
4 – les caractéristiques technologiques (poids spécifique, force boulangère, indice de Zélény, critères alvéographiques, comportement en panification…).
