Ce document synthétise les principales caractéristiques de plus de 70 variétés de blé tendre adaptées à une conduite en agriculture biologique : caractéristiques physiologiques (précocité, alternativité, hauteur, résistance au froid, résistance à la verse…), résistances faces aux agresseurs (pouvoir couvrant, résistance à la fusariose, à la rouille, à l’oïdium, à la septoriose…), valeurs technologiques (poids spécifique, indice de Zélény, force boulangère…). Il offre également un comparatif des principales variétés, en fonction de leur rendement et leur teneur en protéines, pour chaque grande région géographique (centre, nord-est, ouest, sud). Cette synthèse a été réalisée grâce à une collaboration entre le CTPS-GEVES, Arvalis-Institut du Végétal, l'ITAB, en lien avec le réseau des Chambres d’agriculture.
