Summary

As part of the Maffra II project a number of garlic varieties were cultivated organically to compare yield and concentration of antibacterial allicin. Yield was up to 7 tons/ha in cv Thermidrome and concentration of up to 56 mg allicin/g dm in cv Vigor. Antibacterial activity in vitro was linearly correlated to allicin concentration in garlic. Antibacterial activity of ramsons was much higher than in garlic compared on the basis of allicin concentration. Ramsons therefore may have other antibacterial compounds as well.

Som en del af Maffra II-projektet blev en række hvidløgssorter dyrket økologisk for at sammenligne udbytte og koncentration af antibakterielt allicin. Udbyttet var op til 7 tons / ha i sorten Thermidrome og koncentration på op til 56 mg allicin / g tørstof i sorten Vigor. Antibakteriel aktivitet in vitro var lineært korreleret med allicinkoncentration i hvidløg. Antibakteriel aktivitet hos ramsløg var meget højere end i hvidløg sammenlignet på basis af allicinkoncentration. Ramsløg kan derfor også have andre antibakterielle forbindelser.
