Når regnen udebliver, og en tørke sætter ind, er der ofte stadig vand i de dybere jordlag. Har en afgrøde dybe rødder, kan den udnytte dette vand. Cikorie er sådan en afgrøde, og den optager betydelige mængder vand fra de dybe jordlag. Det gør, at den kan overleve en længere tørkeperiode.
