There is a strong demand for organic tofu. However, the demand for Swiss organic soya cannot be supplied currently. Therefore, this leaflet provides information on what to consider during the whole soya production process.
First, it provides an overview on soya and its use. In the main part, the cultivation is explained. Different topics about soya varieties and their needs, the right crop rotation and weed as well as disease management are covered. Finally, there is also some information about economic aspects.
This leaflet was made for organic farmers that want to begin cultivating organic soya, but it might also be of use to conventional farmers. The information about economic aspects is specific to Switzerland.

Biotofu erfreut sich einer grossen Nachfrage. Der Bedarf an Schweizer Biosoja für die Tofuherstellung kann momentan jedoch nicht gedeckt werden. Aus diesem Grund zeigt dieses Merkblatt, auf was beim Sojaanbau von der Saat bis zur Ablieferung geachtet werden muss.
Zuerst wird kurz über Soja und die Verwendungszwecke informiert. Im Hauptteil wird die Kultivierung erklärt. Diverse Themen zur Sortenwahl und deren Bedürfnisse, die richtige Fruchtfolge und Unkraut- sowie Krankheitsregulierung werden behandelt. Schliesslich wird noch über einige wirtschaftliche Aspekte informiert.
Dieses Merkblatt spricht hauptsächlich Biobauern an, welche bereits Soja anbauen oder damit beginnen möchten. Es kann jedoch auch für konventionelle Sojabauern interessant sein. Die wirtschaftlichen Aspekte sind spezifisch für die Schweiz.
