This report presents the situation of the French organic sector and offers a state of the art of the case studies that are available about values-based food chains. It shows that despite they describe very different initiatives and chains, most studies refer to the structural crisis of the conventional sector and to the risk of “conventionalisation”, thus making issues of governance and decision making (as well as their evolution over time) of major importance.
