Summary

The experiments showed, that the substitutions of fish meal by the matrix of plant protein koncentrates (pea, horse bean and rape) did not have significant effekces on the growth of the trout as well as on fish health. Investigations of the product quality did show changes in taste as well as texture properties. The case studies provided important information about progress, but as well revealed new challenges for the organic culture of trout in Denmark.

Forsøgene viste, at de udførte substitutioner af fiskemel med planteproteinkoncentrater ikke havde nogen signifikante effekter på fiskenes tilvækst. Ligeledes kunne det konkluderes, at de udførte substitutioner ikke havde nogen negativ effekt på fiskenes sundhedstilstand. Undersøgelserne af produktkvalitet viste dog visse ændringer i både smags- og tekstur egenskaber. Case studierne frembragte væsentlige informationer om fremdrift, men tillige afdækkede nye udfordringer for den økologiske opdrætsform i Danmark.
