Summary

Summary translation

The organic food chains are in some cases organized as an alternative to the traditionel agro-industrial food chain, while in other cases they follow the traditionel from 'farm to plate'. Why do they do that? And what differences and similarities are there in the organization of organic food chains between milkproduction, vegetables and meat (poultry, pork, sheep and beef)? The article decsribes some of the new approaches of modelling these questions that the SAMSON research project is dealing with, in an attempt to explain these diffences and similarities.
