Bruk av økologisk mat begrunnes ofte med argumenter om bedre helse og miljø. I økologisk matproduksjon bidrar lavere energiforbruk, oppbygging av organisk materiale i jord og ingen bruk av kunstgjødsel og kjemisk-syntetiske sprøytemidler til at utslippene av klimagassene karbondioksid og lystgass reduseres.
