Summary
In der Pionierzeit haben sich viele landwirtschaftliche Betriebe im ökologischen Landbau stark mit Fragen des Bodens und der Nährstoffkreisläufe befasst, während betriebswirtschaftliche Überlegungen eine nachrangige Rolle spielten. Durch die Entwicklung der Märkte, durch innerbetriebliches Wachstum und Einstieg in neue Betriebszweige sind die Anforderungen im Management ökologischer landwirtschaftlicher Unternehmen mittlerweile stark gewachsen. Analyse, Planung und Steuerung sind die wichtigsten Aufgaben im Management. Um den ökologischen Landbau weiter zu entwickeln müssen Neueinsteiger ebenso wie bereits ökologisch wirtschaftende Unternehmer mit guten ökonomischen Ergebnissen sichtbar machen, dass ökologischer Landbau Erfolg verspricht.
Deshalb wurden betriebswirtschaftliche Instrumente für den ökologischen Landbau und Beispiele aus dem ökologischen Landbau zusammengestellt. Beispiele in der Veröffentlichung können Anhaltspunkte und Orientierung sein. Sie müssen aber immer auf den Einzelfall abgestimmt und angepasst werden. Die Methoden und Beispiele beruhen auf langjährigen Erfahrungen in der Beratung. Mit den Instrumenten für Analyse, Planung und Steuerung im Management-Handbuch sollen sowohl einfache als auch komplexe Analysen, Planungen und Kalkulationen auf Teilkosten- und Vollkostenbasis ermöglicht werden. Diese dienen als Grundlage für Managemententscheidungen.
Aus einer Reihe von Quellen und langjährigen Beratererfahrungen wurden darüber hinaus Daten zusammengestellt, um brauchbare produktionstechnische und ökonomische Zahlen für die ökologische Landwirtschaft zusammenzustellen. Es werden praxisübliche Produktionsverfahren und beispielhafte Deckungsbeitrags- sowie Vollkostenrechnungen und Erfolgskennzahlen für die Betriebszweige Marktfrucht- und Feldgemüse, Futterbau, Zwischenfrüchte und Tierhaltung dargestellt. Angesprochen werden gängige Verfahren ebenso wie weniger verbreitete Anbaubereiche wie etwa die Saatgutproduktion: Bei der Tierhaltung werden neben Milchvieh, Mastrindern und Schweinen auch Schafe, Ziegen und Gänse berücksichtigt. Die Vorstellung verschiedener Stallbaulösungen ergänzt die Ausführungen in diesem Bereich. Die Daten können nur Orientierungen und Beispiele geben, die immer in der Praxis kritisch hinterfragt werden müssen. Die Daten wurden von vielen erfahrenen Beratern und Experten verfasst oder überprüft. Dennoch sind Lücken und Mängel bei einem umfangreichen Zahlenwerk nicht ganz auszuschließen.
Die Methoden und Daten des Handbuchs sollen gemeinsam mit Beratern, Praktikern und anderen Nutzern als gemeinsame betriebswirtschaftliche Plattform für die ökologische Landwirtschaft weiterentwickelt und etabliert werden.
Das Management Handbuch wurde in 2 Bänden als KTBL Schriften 425 und 426 veröffentlicht und wird über den Landwirtschaftsverlag Münster vertrieben. Summary translation
Organic farming in Germany and in the EU has grown fast over the last decade. In the past, farmers and researchers concentrated their efforts on soil, nutrition and plant topics, while questions of business management played a minor role. Meanwhile, as organic farms have grown in number and size, sound management information are a key factor farmers for further development of organic farming. Advisors, students and researchers need more and better business and management information. Information on on costs, performance and management of organic farms are however not easily available. It is the purpose of this handbook to provide comprehensive and relevant up-to-date data and information on costs as well as on physical and financial performance to all those concerned with organic farming. The books cover a wide range of crops and lifestock enterprises in order to facilitate conversion of farms and to improve the performance of those already converted.
Volume 1 contains instruments for organic farming business and examples for the application of these instruments on existing organic farms. Although instruments and examples are based on German experience, they can be of great use in other countries as well. The instruments are designed for analysing, planning and controlling of organic farming business in order to support management decisions.
Volume 2 contains technical and economic data and information for a wide range of farming sections such as arable crops (including less common crops such as seed production), horticultural crops, forage crops, green manure and lifestock. The lifestock chapter covers not only milk and beef production but also sheep, goats and birds (egg production and meat from poultry, goose and ducks). The description of basic facts on each farming business is follwed by calculations and data on calculation sheets from Compact Disks. The sheets and data cover physical and financial output as well as variable and fixed costs. Each section is assessed through wholesale gross margins and total costs. The description of farm buildings adapted to the needs of organic farms including drawings and cost assumptions completes volume 2 of the handbook.
The data and information have been prepared by well over 30 experienced German organic advisors and are based on long-term experience of these advisors and of the editor. The editor and his team have backed this data through evaluating and examinating a wide range of sources like research reports and financial data of sucessful organic farms. The data attempt to provide the best possible estimates for the physical and financial performance of well managed organic farms with average resources and good farming practice are therefore not designed as a representative sample of all existing organic farms. The data can also useful to benchmark organic farms in order to develop them towards better economic results.
All information, data and examples are designed to give useful and relevant support to all those involved in organic farming. However, as each case and situation is different, the delivered information and date has to be adapted to each individual farm or case. To facilitate this, both volumes contain Compact Disks which provide the complete cost and performance data in calculation sheets. With these sheets the user is able to adapt the provided data to his individual needs.
It is intended to establish the handbook as a standard book for organic farming and to develop it further towards a common economic platform by a network of advisors, researchers, farmers and other. The two volumes (Nr. 425 und 426) have been published by KTBL.
