Summary

Si les pratiques de vinification en agriculture biologique sont aujourd'hui encadrées par une réglementation, les pratiques des vignerons sont très variées, en lien avec leurs objectifs. Ce dossier revient sur la multiplicité des pratiques relatives à la fermentation alcoolique, étape clé de la vinification, notamment à travers une enquête réalisée par l'Itab. Concernant la réglementation européenne, en cours de révision, la position de la France est exposée. Enfin, les résultats de deux projets de recherche sont présentés : Levains bio s'est penché sur la qualité des vins et l'utilisation de levures et bactéries indigènes ; Securbio a recherché des solutions afin d'éviter les contaminations par les pesticides des vins bio. Le processus de fabrication d'un pied de cuve est également décrit.


Summary translation

While winemaking practices in organic farming are now regulated, the practices of winemakers are very varied, in line with their objectives. This folder reviews the multiplicity of practices relating to alcoholic fermentation, a key stage in winemaking, particularly through a survey conducted by Itab. With regard to European regulations, currently under revision, the position of France is exposed. Finally, the results of two research projects are presented: "Levains bio" (organic sourdough) focused on the quality of wines and the use of indigenous yeasts and bacteria; Securbio has been looking for solutions to avoid pesticide contamination of organic wines. The process of manufacturing a "pied de cuve" is also described.
