Summary

Der Bio-Geflügelmarkt in Deutschland ist zwar noch eine Nische, hat aber großes Wachstumspotenzial. Im BÖLN-Projekt „Analyse des Bio-Geflügelmarktes“ wurden Schlachtereien, Verarbeiter, Produzenten und Berater nach Hemmnissen und Chancen zur Weiterentwicklung befragt. Auf Produzentenseite gibt es vor allem Unsicherheiten bei der Genehmigung von Stallneu- und Umbauten, außerdem verfügen umstellungswillige Betriebe nicht immer über genügend Ackerfläche für die Fütterung des Geflügels. Bei Puten wird noch an langsam wachsenden, angepassten Zuchtlinien gearbeitet.
Chancen für den Ausbau des Bio-Geflügelmarktes bestehen im direkten Kundenkontakt, aber auch im Zusammenschluss der Produzenten zu Erzeugerorganisationen. Dies wird als eine Möglichkeit gesehen, um größere Strukturen des Handels bedienen zu können. Die Preise für Bio-Geflügel sind sowohl auf Erzeuger- als auch auf Verbraucherebene ungefähr dreimal so hoch wie für konventionell erzeugtes Geflügel, zeichnen sich aber durch eine hohe Stabilität aus, wodurch alle Beteiligten langfristig planen können. In manchen Regionen mangelt es an für Bio-Geflügel zugelassenen Schlachthöfen.
Mit der erstmaligen Erstellung einer Versorgungsbilanz hat sich für Bio-Geflügelfleisch in Deutschland eine Importrate von rund 5 % herauskristallisiert. Für die Verarbeiter ist die Ganztierverwertung die größte Herausforderung. Nur wenn alle Teile mit Bio-Aufschlägen vermarktet werden können, kann auch das beim Kunden beliebte Brustfleisch zu kostendeckenden Preisen verkauft werden. Für die übrigen Teile, wie Flügel und Beine müssen verstärkt andere Verkaufskanäle gefunden werden. Hier dürfte die Außer-Haus-Vermarktung künftig eine größere Rolle spielen, aber auch die Verarbeitung zu Babynahrung und anderen Convenience-Produkten. Das Gleiche gilt für die Verarbeitung von Bio-Bruderhähnen und -Althennen, bei denen das Angebot größer als die Nachfrage ist. Der Vergleich mit Marken- und Premiumprogrammen im Lebensmitteleinzelhandel zeigt, dass sich beide Produktionswege eher ergänzen als sich Konkurrenz machen, wichtig ist aber eine eindeutige Kennzeichnung zur besseren Unterscheidung der Produkte im Laden.

The organic poultry market in Germany is still a niche, but it has large growth potential. As part of the "Analysis of the organic poultry market" project of the Federal Programme for Organic Agriculture and Other Forms of Sustainable Agriculture (BÖLN / Bundesprogramm Ökologischer Landbau und andere Formen nachhaltiger Landwirtschaft), abattoirs, processors, producers and consultants were interviewed about constraints on and opportunities for further development. On the producers' side, the biggest concerns relate to building and reconstruction permits for poultry housing. Also, farmers willing to convert do not always have enough agricultural land to feed the fowl. In the case of turkeys, there is still a shortage of adequate slow-growing adapted breeds.
Opportunities for expanding the organic poultry market include direct contact with consumers and forming producer organisations. This option is seen as a possibility to serve larger trading organisations. Prices for organic poultry, both at the producer and consumer level, are about triple those for conventionally produced poultry, but they are very stable. This enables all parties involved to make long-term plans. In some regions, there is a lack of abattoirs licensed for organic poultry.
The first-ever supply and demand balance for organic poultry meat in Germany has identified an import rate of around 5 per cent. The biggest challenge for processors is utilising the whole bird. Only if all parts can be marketed at organic premiums can the popular breast meat be sold at competitive prices. Efforts must be increased to find other sales channels for the remaining bird parts, such as wings and legs. The role of the away-from-home market is likely to increase in the future and so is processing into baby food and other convenience goods. The same applies to processing organic male chicks and old hens, where supply exceeds demand. Comparison with brand and premium programmes in the food retail sector shows that the two production methods complement rather than compete with each other. However, it is important to label the products clearly for better distinction at the retail shop.
