Summary

Das Projekt „Pökelstoffe in Öko-Fleischwaren“ untersucht die Frage der Verbraucherakzeptanz von Wurstwaren ohne Pökelstoffe (PS) in einem Praxistest und befasst sich mit der Anwendbarkeit von Ersatztechnologien zur Vermeidung oder Reduktion von Pökelstoffen. Ein Verkaufstest mit neu entwickelten Wurstwaren ohne Pökelstoffe wurde in sechs Filialen einer Supermarktkette durchgeführt. Die Wurstsorten wurden jeweils als konventionelle und als ökologische Variante mit und ohne PS angeboten. Nach der Einführungsaktion mit kommunikativer Unterstützung wurde der Abverkauf über zwölf Wochen gemessen. Über den gesamten Untersuchungszeitraum wurde mit den Öko-Sorten ohne PS im Durchschnitt ein Öko-Marktanteil von rund 34 Prozent erreicht. Die Einführung der Öko-Sorten ohne PS hat sich im Untersuchungszeitraum mit zehn Prozent Anteilsplus positiv auf den gesamten Öko-Marktanteil in den sechs Testgeschäften ausgewirkt.
Eine im Rahmen einer Befragung von Herstellern von Öko-Wurstwaren durchgeführte Sortimentsanalyse ergab, dass bei diesen zwei Drittel der Öko-Wurstarten ohne und ein Drittel mit PS hergestellt werden. Je nach Produktart stellt sich die Situation in Bezug auf die Nutzung von PS in Abhängigkeit der technologischen Eigenarten und der Verbrauchererwartungen unterschiedlich dar.
In der Literatur sind Studien und Hinweise auf Technologien zu finden, die ohne PS arbeiten oder die auf einen verminderten Einsatz der PS setzen, ohne dass immer von einer Umrötung der Ware ausgegangen wird. Die Implementierung in die Praxis wird durch Probleme wie z. B. Akzeptanz für diese Ersatztechnologien, technische Anpassungsnotwendigkeiten und Investitionen in die Produktentwicklung sowie strittige Rechtsfragen erschwert. Die Befragung der Praktiker in Hinblick auf ihre Erfahrungen mit Ersatztechnologien war schwierig und erbrachte widersprüchliche Ergebnisse.
In einem Expertenworkshop wurden die Auswirkungen des Verbotes bzw. der Zulassung von PS auf den Markt für ökologische Fleisch- und Wurstwaren diskutiert und eingeschätzt.

The ‘Curing Agents in Organic Meat Products’ project uses a practical experiment to examine the issue of consumer acceptance of sausage products with no curing agents and looks at the applicability of substitute technologies for avoiding or reducing the use of such agents. A sales experiment was carried out using newly developed sausage products without curing agents. The experiment was run in six stores operated by one particular supermarket chain. In each store, the sausage products were offered for sale in both conventional and organic variants, with and without curing agents. Following a launch promotion with advertising support, sales were measured over a 12-week period. The organic variants with no curing agents achieved an average share of around 34 percent of all organic sales over the full period of the test. The introduction of organic variants without curing agents also had a positive effect on the share of total sales from organic products in the six test stores, increasing this by 10 percent.
A product range analysis carried out as part of a survey of organic sausage producers showed that two thirds of the organic sausage products they produce are made without curing agents and one third with. The situation in relation to the use of curing agents varies by product type dependent on technological idiosyncrasies and consumer expectations.
Previous literature on the subject includes studies and information on technologies that work without curing agents, or that are based on a reduced use of these, without necessarily always expecting an alteration in the redness of the product. Putting these into practice is made difficult by problems such as acceptance of these substitute technologies, the need to adapt production equipment, investment in product development and contentious legal issues. Questioning producers about their experiences with substitute technologies was difficult and generated contradictory results.
A workshop run with a group of industry experts discussed and evaluated the impact on the market for organic meat and sausage products of banning / permitting curing agents.
