La plupart convergent sur la thèse de la double tendance du marché, validée par les stratégies d’entreprises. Pour certains, la consommation de ces produits est intégrée dans une attitude globale fondée sur des valeurs éthiques (touchant par exemple l’environnement) ; pour d’autres, ces produits appartiennent à un phénomène bien connu de diversification de marché et de niche, plus ou moins durable. Pour les responsables, il est important de bien mesurer et caractériser cette dichotomie, sur des filières bio bien identifiées, afin de prendre les décisions stratégiques et pouvoir mieux fidéliser les consommateurs.
