Zusätzlich zu Aspekten der betriebswirtschaftlichen Situation und der Vermarktungssituation deutscher ökologischer Gemüsebetriebe sind Daten zu Betriebsstrukturen, zu den wichtigsten Kulturen, zu Anbau- und Kulturverfahren (z.B. Düngung, Pflanzenschutz, Fruchtfolgen usw.) sowie zur innerbetrieblichen Verarbeitung zu erheben. Diese Parameter sollen vor allem vor dem Hintergrund regionaler Unterschiede Berücksichtigung finden. Die Daten sollen eine umfassende und repräsentative Übersicht des ökolog. Gemüsebaus liefern und dementsprechend aus Betrieben unterschiedlicher Struktur (reine Gärtnereibetriebe, gärtnerische Gemischtbetriebe mit Gemüsebau usw.) zusammengestellt werden.
