Für den Naturkosthandel werden noch weit höhere Verderbquoten angenommen. Als Grund dafür wird die geringere Umschlaggeschwindigkeit im Vergleich zu konventionellen Produkten genannt. Außerdem muss aufgrund des Anbauverfahrens (kein Einsatz chemischer Pflanzenschutzmittel) und fehlender Konservierung (bei Südfrüchten) in der Nacherntephase mit einem vermehrten Wachstum von fäulniserregenden Mikroorganismen an der Produktoberfläche gerechnet werden. Ziel des Projektes ist daher die Erarbeitung einer Handlungs- anleitung/eines Leitfadens für die qualitätserhaltende Präsentation und Kurzzeit-Aufbewahrung von Bioobst und -gemüse zur Nutzung vor allem im Einzelhandel und bei der Direktvermarktung.
