L'augmentation de la taille des fromageries par le processus de concentration soulève de nouvelles questions dans la mise en valeur du petit-lait. L'affouragement aux porcs devient plus difficile à cause des quantités élevées à mettre en valeur. L'ALP veut trouver des alternatives. Par ailleurs, les fromages au lait de chèvre et au lait de brebis occupent une place toujours plus grande sur le marché. Dans le passé, la recherche s'est concentrée sur le lait et les produits au lait de vache. Maintenant, l'ALP veut combler les lacunes dans ce domaine.
