First results based on empirical data show that food quality - as perceived by consumers - does not only refer to classical parameters such as freshness, ingredients or appearance. Rather, perception of food quality seems to be closely related to how consumers feel about their quality of life. Thus, product characteristics are not only derived from their ingredients - but also from information and personal experiences related to production processes, authenticity, and other aspects.} }
