Når andelen av økologisk melkeproduksjon øker er det viktig å sikre at økologisk melk og økologiske melkeprodukter har en høy ernæringsmessig og sensorisk kvalitet. Basert på litteraturstudie og at det i Norge generelt er lavere fôrstyrke, større andel belgvekster og større andel usådde arter og urter i eng- og beiteavlinga i økologisk mjølkeproduksjon enn i konvensjonell har vi formulert følgende hypoteser: Økologisk melk som er produsert på grovfôr fra langvarig og urterik eng: - har lavere innhold og andel av n-3 fettsyrer, transvaksensyre (TVA), konjugerte linolsyrer (CLA) - har høyere innhold av vitaminer (tokoferoler, karotenoider) - har lavere innhold av planteøstrogener - er sterkere mot oksidering (mer holdbar) enn økologisk melk produsert på grovfôr fra kortvarig og kløverrik eng. Økologisk melk har høyere innhold og andel av n-3 fettsyrer, TVA, tokoferoler, kartenoider og planteøstrogener men er mer utsatt for oksidering enn konvensjonell melk.
