An der Befragung beteiligten sich 92 Weinbaubetriebe und damit ca., 25% aller ökologisch arbeitenden Weinbaubetriebe aus allen Anbaugebieten in Deutschland. Der Schwerpunkt der Befragung lag auf der Erfassung der in den Betrieben eingesetzten und als notwendig erachteten Zusatz- und Behandlungsstoffe. Die Mehrzahl der eingesetzten Zusatz- und Behandlungsstoffe ist im Anhang VI VO(EG) 2092/91 zugelasen. Nur wenige Zusatz- und Behandlungsstoffe werden für eine qualitätsorientierte ökologische Weinbereitung zusätzlich benötigt. Der Einsatz von Schwefeldioxid oder Sulfit ist unumstritten. Strittig hingegen ist die Höhe des zulässigen Gesamt- SO2 -Wertes. Kritische Zusatz- und Behandlungsstoffe im Sinne der Gentechnikfreiheit von Bio Produkten sowie der Kennzeichnung allergener Behandlungsstoffe wurden in der Studie ermittelt.
