Summary

Um den Marktanteil von Öko-Produkten zu erweitern, bedarf es über die klassische Gruppe der umweltinteressierten Käufer hinaus der Ansprache neuer Zielgruppen. Das größte Potenzial wird derzeit bei den Selten- und Gelegenheitskäufern erwartet, die ihre Bio-Einkäufe größtenteils im Lebensmitteleinzelhandel tätigen. Das Ziel der vorliegenden Studie ist es, das Konsumentenverhalten im Bio-Bereich im Hinblick auf Ernährungsstile, Kaufmotivationen und Zahlungsbereitschaften detailliert zu untersuchen, um daraus spezifische Marketingempfehlungen für die Öko-Selten- und Gelegenheitskäufer abzuleiten.
Im Rahmen der Studie wurden zur Erfassung der aktuellen Vermarktungssituation 12 Expertengespräche mit Produzenten, Verarbeitern und Händlern am Bio-Markt geführt. Im Kern zeigt sich, dass es bisher kaum Kenntnisse über die verschiedenen Bio-Käufergruppen gibt und zielgruppenspezifische Vermarktungskonzepte noch wenig ausgereift sind. Der zweite Studienteil umfasste 32 Tiefeninterviews mit Verbrauchern. Es konnten produktspezifische Kaufmotivationen und tiefergehende Werthaltungen identifiziert werden. Diese weisen darauf hin, dass der Bio-Konsum bei den Selten- und Gelegenheitskäufern stärker von egoistischen als von altruistischen Motiven bestimmt wird. Als drittes Element der Untersuchung wurde eine bundesweite Befragung von 1.150 Supermarktkunden durchgeführt. Sie umfasste u. a. ein Wahlexperiment auf Basis der Discrete Choice-Analyse (DCA), das der Ermittlung von Bio-Marktanteilen und von Einflussgrößen auf die Bio-Kaufentscheidung diente. Auf Basis einer Ernährungstypologie kann eine erweiterte Bio-Zielgruppe von etwa 40 % der Konsumenten identifiziert werden. Die Ergebnisse der DCA verweisen auf einen noch nicht ausgeschöpften Marktanteil von Bio-Produkten und zentrale Positionierungseigenschaften wie Gesundheit, Genuss und Regionalität.


Summary translation

To enlarge the quota of organic products, beyond the classic group of the environmental concerned customers, new target groups need to be addressed. At the moment the highest potential is expected in the group of infrequent and occasional buyers, who buy their organic food mainly at supermarkets. The aim of this study is to investigate the consumer behaviour with regard to food styles, buying motivation and willingness to pay in detail, so that specific marketing recommendations for the target group of infrequent and occasional buyers can be derived.
In the first part of the study, 12 expert interviews were conducted with producers, processors and retailers in the organic market. They served to comprehend the current selling conditions. It can be asserted, that there is hardly any knowledge about the different groups of organic buyers and that target group specific marketing concepts are elaborated little yet. The second part of the study consisted of 32 in depth interviews with customers. On basis of the laddering technique product specific buying motivations and underlying personal values could be identified. These indicate, that the organic consumption of infrequent and occasional buyers is determined by egoistic rather than by altruistic motives. The third element of the study was a national consumer survey on 1.150 customers of supermarkets. Among other things it comprised of a choice experiment on the basis of the Discrete Choice Analysis (DCA), which served to determine market shares of organic products and to identify factors influencing the buying decision. On basis of an alimentary typology, a broadened target group for organics that consists of about 40% of all consumers could be identified. The results of the DCA referred to a market share of organic products not yet utilised and to central characteristics like health, enjoyment and regionalism, that can be used for the positioning.
