Summary

In der Fütterung monogastrischer Nutztiere spielt neben der ausreichenden Menge an Rohprotein (XP) auch die Proteinqualität eine entscheidende Rolle. Die Proteinqualität hängt maßgeblich vom Verhältnis der Aminosäuren (AS) untereinander ab. Ein negativer Einfluss steigender XP-Gehalte in verschiedenen Körnerleguminosen auf das AS-Muster ist bereits beschrieben worden (Schumacher et al. 2011, Wang et al. 2004). Da ein hoher XP-Gehalt ein wichtiges Kriterium bei der Sortenwahl ist, ist es von noch größerer Bedeutung, eine solche Abhängigkeit zu erkennen.
Ebenso wie in der Literatur beschrieben, nahm in dieser Stichprobe der Gehalt einiger essentieller AS tendenziell mit steigendem XP-Gehalt ab. Unter diesen befinden sich die in der Monogastrierfütterung limitierenden AS. Die These, dass die Proteinqualität bei sinkenden XP-Gehalten steigt, wird durch diese Ergebnisse unterstützt. Weitere Untersuchungen mit größeren Stichproben sind notwendig.


Summary translation

Field beans are a valuable source of protein. Due to restrictions in the use of feedstuffs and supplements in organic farming, there is a continuous rise of interest for alternative protein sources. In the feeding of monogastric animals, not only the quantity of crude protein (XP) but also the quality plays an important part. Hence, value should be placed on the amino acid (AS) profile. To find out the effect of higher XP content in field beans on the AS profile and therefore on the protein quality, 27 field bean samples from five locations in Germany were analyzed on their contents of XP and AS. Subsequently, Pearson correlation analyses were conducted. Negative correlations between the XP content and the contents of lysine, methionine, threonine, histidine, phenylalanine, cysteine, tyrosine and alanine were found. Moreover, the arginine content was positively correlated with the XP content. This supports the assumption of a negative effect of increasing XP contents on the protein quality. Further investigations with larger sample sizes are required.
