Summary

In Diskussion um das Für und Wider des Einsatzes von nitrat- bzw. nitrithaltigen Pökelstoffen in Öko-Wurstwaren wird häufig die Befürchtung geäußert, dass Wurst ohne entsprechende Pökelstoffe von Verbrauchern insbesondere wegen des ungewohnten Aussehens nicht akzeptiert wird. Mit relativ aufwändigen Verkaufstests im allgemeinen Lebensmitteleinzelhandel wurde die Verbraucherakzeptanz von drei Öko-Wurstsorten, die ohne Nitritpökelsalz (NPS) hergestellt worden waren, untersucht. Dabei wurden parallel drei Varianten der jeweils gleichen Wurstsorten über mehr als 10 Wochen verkauft: eine konventionelle Variante, eine Öko-Variante mit und eine ohne Verwendung von NPS bei der Herstellung. Außerdem wurden alle Varianten parallel im Bedienungs- und im Selbstbedienungsbereich verkauft. Darüber hinaus wurden auch noch Preistests in unterschiedlichen Varianten durchgeführt. Die Tests haben zu einer im Vorfeld nicht in dem Ausmaß erwarteten hohen Verbraucherakzeptanz der ohne NPS hergestellten Öko-Würste geführt. Darüber hinaus konnten eine Reihe weiterer überraschender Ergebnisse erzielt werden wie relativ geringe Substitutionseffekte zwischen den beiden Öko-Wurstvarianten oder eine relativ preisunelastische Nachfrage nach Öko-Wurst insgesamt.

In discussions on the pros and contras of the use of nitrite curing salt (NCS) in organic sausages, the fear has often been expressed that sausage without curing substances will not be accepted by the consumer because of the strange look of the product (grey colour). Consumer acceptance of three kinds of organic sausage which have been produced without NCS has been investigated in a store-test in conventional supermarkets. The supermarkets have sold the same sausages in two other variants before, organic and conventional with NCS. During the test period of ten weeks all three variants, conventional with, organic with and organic without NCS, were offered in parallel. All varieties were sold both over the counter and in self-service. Price tests were also part of the store-test. The main result of the tests is that the organic sausages produced without NCS gained a total market share of 17 percent in the first weeks after the introduction.
The new organic sausages attracted not only consumers who bought the other variant of organic sausages with NCS before, but also buyers of conventional sausages with NCS. Another surprising result was that the price elasticity of demand for organic sausages was very small compared with conventional sausages.
