Summary
Mit der vorliegenden Studie wurde der aktuelle Stand der ökologischen Weinverarbeitung erfasst. An der Befragung beteiligten sich 92 Weinbaubetriebe und damit ca., 25% aller ökologisch arbeitenden Weinbaubetriebe aus allen Anbaugebieten in Deutschland. Der Schwerpunkt der Befragung lag auf der Erfassung der in den Betrieben eingesetzten und als notwendig erachteten Zusatz- und Behandlungsstoffe. Die Mehrzahl der eingesetzten Zusatz- und Behandlungsstoffe ist im Anhang VI VO(EG) 2092/91 zugelasen. Nur wenige Zusatz- und Behandlungsstoffe werden für eine qualitätsorientierte ökologische Weinbereitung zusätzlich benötigt. Der Einsatz von Schwefeldioxid oder Sulfit ist unumstritten. Strittig hingegen ist die Höhe des zulässigen Gesamt- SO2 -Wertes.
Kritische Zusatz- und Behandlungsstoffe im Sinne der Gentechnikfreiheit von Bio Produkten sowie der Kennzeichnung allergener Behandlungsstoffe wurden in der Studie ermittelt.
Summary translation
This report defines a significant and clear picture of who are the German organic wine producers, how he/she works in the cellar, what wine type and individual wine quality philosophy is obtained, and which technology and processing aids are necessary and used for organically produced high quality wine.
The positive integration of personal in-depth qualitative interviews (92) assures
large degree of representation (about 25% of German organic wine producers have been involved), as a large number of producers are involved, as are qualitative assessments.
Wine processing is performed in cellars with a generally good level of technology where especially temperature control and management devices are available.
In general a limited quantity of adjuvants and additives is used even if a wide range of products are used. The products are considered essential but are always used in specific cases and with a good understanding of the mode of action. SO2 use is in general not lower as compared to conventional use and the German organic winemaker doesn’t want to reduce the official level established in Annex V A EU VO 1493/1999.
Necessary adjuvants or processing aids for organic quality wine making, which are not mentioned in Annex VI EU VO 2092/91, are copper sulfate, Di-ammonium-phoshate and thiamine.
Critical processing aids according to the ban of genetically modified organisms and there derivates used in organic food processing are identified as well as processing aids with an allergenic potential.
