Summary

Auf Grundlage des Projekts „Entwicklung eines Standardkontrollprogramms mit Leitfaden nach VO (EWG) Nr. 2092/91 in Einrichtungen der Ausser-Haus-Verpflegung (AHV“) (03OE016) wurde ein angepasstes Standardkontrollprogramm für Events entwickelt.
„Events“ sind von Unternehmen oder Privatpersonen inszenierte Ereignisse (Veranstaltungen), um definierte Zielgruppen im Sinne eigener Marketing- bzw. Kommunikationsziele zu aktivieren. Gastronomieevents, bei denen Öko-Lebensmittel eingesetzt werden, haben in Deutschland deutlich zugenommen. Sie reichen von der Durchführung von Öko-Aktionstagen oder -wochen bis hin zu Kulturfestivals.
Das Projekt gliedert sich in Designphase, Testphase, Anpassung sowie einem Abstimmungsseminar mit Öko-Kontrollstellen und zuständigen Behörden.
Auf Grundlage von identifizierten „kritischen Punkten“ wurde das Standardkontrollprogramm entwickelt, mit spezifischen Informationen zu Kennzeichnung und –verfahren, Meldeformular, Betriebsbeschreibung, Formular Rezeptur, Inspektionsformular. Die Entwurfsdokumente wurden in Probeinspektionen auf ihre praktische Anwendbarkeit hin überprüft und anschließend angepasst.
Auf Grundlage des identifizierten Informations- und Schulungsbedarfs wurden Informations- und Schulungsmaterialien erstellt, in Informationsgesprächen und Schulungen überprüft und ebenfalls angepasst.

On the basis of the project „Development of a standard organic certification procedure and manual for foodservice operations according to the EU Regulation Nr. 2092/91” (03OE016) a Standard Procedure For Events was developed.
“Events” are such occurences as directed by organisations or private persons in order to motivate defined population segments with respect to own marketing or communications goals. In Germany the amount of gastronomic events incorporating organic produce has increased significantly. The range covers organic promotion days and weeks as well as cultural and food festivals.
The aforelying project consists of a design phase, a test phase, consequent adaptation and a final workshop with certifying organisations and their respective authorities to reach a common agreement.
On the basis of identified critical points the standard procedure was developed with specific information for event operators with respect to application, description of the operation, recipe form and labelling as well as specific information for the certifying bodies (inspection form). The procedure and draft documents were tested for their practicability in trial inspections and modified accordingly.
On the basis of the identified information and training needs of operators appropriate media was developed which was similarly tested and adapted in consultations and training sessions.
