Summary
Mit dem Ziel, die Marktsituation für den Verbraucher zu beschreiben, wurden Proben von Speisemöhren des Anbaujahres 1996 aus der biologisch-dynamischen und konventionellen landwirtschaftlichen Praxis gesammelt. Dabei zeichneten sich die biologisch-dynamischen Möhren durch weniger Weichfäule und Verdunkelung im Stresslagertest als die konventionellen aus und geringere Verluste nach 120-tägiger Lagerung unter Praxisbedingungen. Bei den Proben der biologisch-dynamischen Betriebe wurden höhere Trockensubstanzgehalte festgestellt sowie höhere Gehalte an Saccharose und Gesamtzucker; die Nitratwerte der DEMETER-Möhren lagen weit unter denjenigen der konventionellen.
Summary translation
In order to give a short description of consumers' situation, qualitative assessments of carrots from 57 biodynamic and 18 conventional farms (harvested in 1996) were made. In total, 80 samples from mainly south German farms were analysed using biochemical methods and their storage behaviour examined. The dry matter content of biodynamic carrots was significantly higher than the one of conventional carrots. No differences could be measured between single root mass. Chemical analysis showed significantly lower contents of nitrate in biodynamic samples, whereas sucrose and total sugar content was higher. Sucrose and nitrate contents were negatively correlated. Samples from biodynamic farms showed less soft rot and darkening in the quick degradation test and resulted in higher parts of saleable and edible portion after 120 days under optimal storage conditions.
